Sweet Potato Sausage Breakfast Bowls

High protein and fiber!

I don’t often rave about kitchen gadgets - I’m a bit of the simple, minimalist type - but these 2 countertop appliances became the hot topic in the chat during my live video!

Here’s the replay of a spontaneous live video I did on Thursday while I prepped my breakfast for the week. I was originally going to share a new Sticky Honey Chili Chicken Wings recipe as this week’s new recipe, but decided that this was too good to not share along with the replay!

I set out to roast vegetables and soft boil some eggs that could go along with my High Protein and Fiber Savory Porridge, but ended up spooning in some lactose free cottage cheese and a unique and unexpected drizzle at the end that made it stand alone without the need for the porridge.

Ps I realized why my eggs were so cooked. I was using my stove top time (6 minutes for soft boiled and jammy). 2 minutes, low pressure, with a quick release is how you get that delicious runny yolk. 4 to 5 minutes max for fully cooked and great for a hard boiled egg.

This could double as a lunch or dinner easily. And if you make it for a meal prep breakfast like I did, you can change up the toppings or sauces from day to day to keep it exciting. A soft boiled egg would also be great!

2 Countertop Appliances I Can’t Live Without Right Now

I’m not normally one to be emphatic about kitchen gadgets. It took me a few years to jump on the Instant Pot train, and I’m still not into the air fryer. I don’t have an avocado slicer, or pineapple corer. And I’m a firm believer that a few good quality pots and pans are all you need, my Vitamix was all I’d ever need for as long as I cooked, and a convection oven is enough to get things crispy.

However. The smoothie situation at my house was starting to get frustrating. Asher was making protein smoothies (late at night.. because he’s a teen), and would put my large blender jar into the dishwasher after. I always needed it the next morning for my own smoothies, or to test recipes with. The younger 2 also started making smoothies, and the Vitamix jar was just so large, they’d end up making enough to serve 5! I tested out the mini beast blender with trepidation, sure that it wouldn’t cut through the flax or chia seeds and kale I always put in my smoothies. It did, and worked like a charm. And it came with 3 blender jars and a to-go lid, so everyone could make and clean their own smoothie cups. I now also use it to make salad dressings and sauces.

Secondly - the “air fryer” or mini countertop oven. I’ve never been into the air fryer trend. You can cook more and get a similar effect with a convection oven. Plus I don’t love anything extra filling up my counters. But the top gadget link request I get is a “non toxic air fryer,” so I’ve purchased a few different brands over the years to test out for you so I could give a good recommendation. I didn’t love any of them.

I got this one about a year ago and we use it at least twice a day. It’s trained me to use the microwave less, and everything tastes so much better in it. It doesn’t heat my whole kitchen, and it’s easy enough that the kids can use it by themselves and heat up a batch of Chicken Nuggets or some frozen fries. I also do our morning breakfast sausages in it, or small batches of cookies. And we got rid of our toaster. I honestly love it, and it’s non toxic (most air fryers aren’t).

I will be reheating this week’s recipe in it all week.

Sweet Potato Sausage Breakfast Bowls

My mom used to drizzle honey or fruit over cottage cheese in the ’90s, so when I pulled this sheet pan breakfast out of the oven and added a scoop of cottage cheese for extra protein, a quick drizzle of honey felt just right. I topped it with my favorite Trader Joe’s Onion Chili Crunch for a sweet and savory combo, then halfway through my late breakfast, I added a spoonful of Green Goddess Dressing—and the herby flavor took it over the top.
