It’s 102F here today, but I’m pretending it’s fall with these new grain-free High Protein Apple Pie Overnight “Oats,” and my new Dairy-Free Pumpkin Spice Cold Brew.
Since so many of you are cooking your way through Make It Easy right now, I figured easy dinners weren’t exactly of need here in the newsletter. I took to our amazing community space here on substack and asked you in the chat what you needed more of! You were unanimous in requesting seasonal treats, high protein breakfasts (with and without eggs), and more make-ahead options.
This recipe fits the bill of ALL three! It’s festive, filling, and nutrient dense.
It serves 6, can be stored for 7 to 10 days, and has roughly 19g of protein and 9g of fiber per serving!
