🎥 With Annie F. Downs. Plus Dairy Free Skillet Queso.

Hello from Washington D.C.!

I’m so excited to be on the third stop of the Make It Easy book tour after amazing nights in Red Bank, NJ, and Boston. These events have turned out to be every bit as intimate and special as I’d hoped, thanks to the tour revamp. I’m beyond grateful to those of you who drove or took trains for hours to spend your evening with me. Your support means the world!

Along the way, we’ve had some incredible guests who each bring their own unique conversations and perspectives to the table. Although we’re making the same recipe every night, no two events are the same, thanks to the amazing guests and our special community members attending and asking different questions. (But fair warning—you might hear a few repeat stories and jokes from me if you watch all nine stops!)

We kicked things off with one of my dearest friends, Annie F. Downs. You probably know her as the host of the top-rated podcast That Sounds Fun, and true to form, she brought plenty of laughter and joy to our first night on tour. Dairy Free Skillet “Queso”

Now, for this week’s Thursday recipe, I’m sharing the tour version of the “cheese” sauce from Make It Easy! Which is also the version you find in Healthy in a Hurry.

On tour, we’ve been adding that ground beef and taco seasoning to turn it into a skillet queso style dip. But in the book, you’ll find it featured in recipes like the Tex-Mex Mac and Cheese, Sheet Pan Smashed Potato Nachos, and Chicken Rice & Broccoli Casserole from the Preorder Bonus chapter. You can also use it in the Cheesy Broccoli Soup, Beef & Zucchini Enchiladas Verdes (page 163), or the Cuban Pork Sheet-Pan Quesadillas (page 108).
