Gluten-Free Pepperoni Pizza Bites

One last recipe for Super Bowl!

Pizza is my love language. If you’ve read any of my cookbook headnotes, you already know how deep my love runs. When I was pregnant with our daughter Aila, I craved it constantly. But after learning the hard way during my pregnancy and postpartum with Asher that it wasn’t worth the health setback, I created my Pizza Pasta in Meals Made Simple. It’s still a family favorite.

For the Super Bowl, I wanted to make something new - something with all the pizza flavors but in a fun, bite-sized, shareable form. I’ve been dreaming up a Pizza Monkey Bread for ages (and saw the request pop up in our Request Line Chat a few months back). Enter these Gluten-Free Pepperoni Pizza Bites.

Except instead of baking it as a pull-apart loaf, I went with individual rolls. As fun as the classic version is, they ended up melting together and losing their shape. Perfecting that for the Baking Cookbook is officially on my to-do list! I’ll probably return to one of my more biscuit-like recipes and morph from there.

These rolls have Manchego, a sheep’s milk cheese, because the proteins in long-aged cheeses like Manchego and Pecorino are easier to digest and devoid of lactose. Plus sheep’s milk cheese has a different protein structure than cows milk, and is typically tolerated better by those who have dairy intolerances (not allergies). But I’ve also included a Dairy-Free and SCD-friendly option!
