Chicken Satay - AKA Yellow Chicken on a Stick according to little Asher

I wanted to share a new recipe I’ve been loving—Thai-Style Chicken Satay Bowls. My kids have always been big fans of chicken satay. Asher used to call it the yellow chicken on a stick when he was little. There’s actually a recipe for it in my very first cookbook, Against All Grain (from 2013), because it was such a staple in our house.

This version skips the skewers and grilling, though. Instead, we pan-fry bite-sized pieces of chicken, which makes the whole process faster and easier. I first made it to use up some leftover Thai peanut-style sauce from Healthy in a Hurry and ended up loving it so much that I froze four lunch portions for the new year.

We serve the chicken over coconut rice made in the Instant Pot. If you prefer, you can sub cauliflower rice, which is what I do for my portion! I have found that I can handle small portions of white rice occasionally—especially when it’s cooked in the Instant Pot. Cooking it this way helps create resistant starch, which is easier to digest and can even have prebiotic benefits.
