Shaved Brussels and Broccoli Salad with Zesty Herb Dressing

St. Patrick’s Day is coming up, and I love to celebrate by teaching my kids about the benefits of some of our favorite green foods. No food dyes or fake foods here, just natural green goodness! Bonus - all of these recipes are great for your microbiome too!
Just to name a few:
Asparagus, artichokes, and romaine lettuce are rich in prebiotic fiber, feeding beneficial gut bacteria and supporting digestion. Avocados provide 9g of fiber per fruit, while spinach and kale offer additional fiber and polyphenols for gut health. Green apples contain polyphenols that help regulate inflammation, and cucumbers aid hydration with their high water content.

We’re using two other microbiome green powerhouses in today’s new recipe! Brussels sprouts and broccoli are high in fiber and contain prebiotic compounds like inulin, which help nourish beneficial gut bacteria and support a healthy microbiome. The herbs in zoug sauce, such as cilantro, parsley, and mint, also provide fiber and essential phytonutrients that can promote the growth of good gut bacteria and support overall digestive health.
This vibrant salad is perfect for making ahead and storing in the refrigerator. The combination of shaved Brussels sprouts, raw broccoli, and a zesty Middle Eastern zhoug sauce offers a delightful balance of textures and flavors, while the dates and pistachios add sweetness and crunch. Zhoug is a spicy Middle Eastern sauce made with fresh herbs like parsley and cilantro, garlic, chili peppers, and spices like cumin, offering a pungent kick. It’s like a sister condiment to the chimichurri from Argentina, which uses parsley, garlic, vinegar, and oil with a tangy, smoky flavor.
