Would This Soup Have Made Ryan Marry Me? Doubtful, back then.
But Guys, We’ve Had a Breakthrough!
Ryan and I have been together since we were 16, and if there’s one thing I know for sure after all these years, it’s that he does not like soup. Like, at all. Well, until this week, with this soup. So, would this Marry Me Chicken Soup have sealed the deal back then? Honestly, probably not. I think he married me for a lot more than food though, because I didn’t even know how to cook back then!
I have breaking news.
He just came into the kitchen and said, “I have something big to proclaim. I’m embracing soup. It fulfills all my needs— I only have 10 minutes between Zoom meetings, and I don’t have to dish up a bunch of different things or heat up multiple items. It’s all in one.”
THIS IS WHY WE MAKE SOUP. Am I right? It’s easy. It’s in one pot. It gets us our protein, fiber, and gut-healing broth all in one bowl. It’s delicious and cozy, and convenient.
So, he did eat a bowl of this for lunch… and actually enjoyed it. I’m not entirely sure I understand his distaste for soup. I think it’s because he doesn’t love when things are all mixed together (he’s not a pot pie fan either!), but if I reduced the broth and served all the same ingredients over pasta, he probably wouldn’t balk. We all have our little idiosyncrasies, don’t we?
So while this soup may not have been the thing to win over Ryan, it just might win over yours—or at least make for a cozy, comforting meal everyone can enjoy.
Marry Me Chicken first gained viral fame as a dish so delicious it was rumored to be so irresistible, it could make anyone fall in love—leading it to take over the internet and become a must-try for home cooks everywhere.
My version is a one-pot, creamy chicken soup, inspired by the original Marry Me Chicken—loaded with roasted and sun-dried tomatoes and a dairy-free swap for the traditional cream. I gave it a healthier twist by adding a ton of veggies and gut-healthy bone broth, turning it into an easy, comforting dinner that’s as nourishing as it is delicious. We ate it with my grain-free cornbread (Celebrations cookbook), but these would be great with it too,
