Oh YUM! This’ll satisfy my former carb-loving self in a healthy way! As a teenager, I LOVED making muffins but they were the Aunt Jemima boxed mixes and so unhealthy! Thinking of subbing some maple sugar and pecans for a Fall twist. YUM. And there’s always chocolate chips…

Oh haha I need caffeine- I just reread and you mixed in the chips. 😃 I had bought the hubby a Simple Mills choc mix and had written “For Kath’s birthday” but this recipe will shoo that box to the back of the pantry!

I made these using the Simple Mills cake mix and they were fantastic! I inadvertently pureed the blue berries into the batter but that just gave it a wonderful BB flavor. (I did add a few whole BB into each muffin. )

My husband, who is a Whataburger type guy actually ate 5 of the muffins and said they were the best GF bb muffins I have ever made. I have to agree.

I've also made your coffee cake twice. Didn't care for the Bobs Red Mill version, but truly enjoyed the Simple Mills version.

Just took the Starbucks Copy cat pumpkin loaf out of the oven- it's delicious. I made one loaf but kept enough out

to Make 3 muffins. Great both ways. I'm going to make some maple cream cheese to go on the side.

I used the Simple Mills Pancake mix and they were delicious! If I can ever find the Simple Mills Vanilla Cake mix I can compare. lol Or just make my own Cake mix and compare.

I haven’t tested it but typically pancake mixes have higher leavening agents and less sweetener. They also have less starch. It would likely work but would definitely change the texture, rise, and sweetness.

Thanks Danielle, what might you use for an SCD cake mix sub? I was thinking of trying your original pancake mix with some date sugar added. Do you think that may be a good place to start?

Yes I think that’s a great place to start! Just keep in mind that it’s higher in coconut flour and without the starch the rise and texture will be a little more dense and less springy.

I made these and they are good. I used Bob Mills mix. However all my blueberries are at the bottom of the mix. Do you have a suggestion? I eat all cake on top and blueberries stacked on the bottom. I must have done something wrong
