We’re back from spring break, and all of the fish we ate while we were in San Diego totally reignited my love for simple, fresh seafood dinners. My kids even ate more fish than they usually do, so I’m keeping the pattern going and working on some new seafood recipes.
This new salmon bowl recipe is the perfect way to ease back into routine—it’s quick, packed with flavor, and makes you feel like you’re still on vacation (even if the laundry pile says otherwise).
The apricot pan sauce adds just the right touch of sweetness, and it’s all served over garlicky cauliflower rice with ribbons of sautéed chard. It’s cozy meets light and bright—and I think you’re going to love it.
