The Only Marinade I’m Making Right Now
It’s our final New-Recipe-Thursday for January, and this chicken marinade is on repeat in my household. It works on salad, or over coconut cauliflower rice, or stuffed into a grain-free wrap. And you can make up a second batch and throw it into the freezer, uncooked, to pull out during a later busy week.
I grill a huge batch of it, serve some for dinner that night, and then keep it in the fridge for easy lunches throughout the week. Because I know not everyone has 60F blue skies right now like we are fortunate to have, I also tested it in the Instant Pot, in a skillet, and even roasted and all are GREAT!
