For the cassava one I don’t usually use a food processor because it’s already so much more finely ground than the almond. Just a bowl and a spoon! 🙌

These look great! I can’t wait to try them out. My oldest daughter loves your Real Deal CCC the best of all the cookies we’ve made. The rest of my kiddos prefer the cowboy cookies. I’m partial to the cowboy cookies myself. I loved oatmeal chocolate chip cookies as a kid so the cowboy cookies hit the spot, and miss no bake oatmeal cookies too. (But I’m not sure I could tolerate all the sugar in them anymore! Lol)

Oh the cowboy cookies sound and look so good 😊 I plan to make them for sure , I use to love ol fashioned oat meal cookies they were my fave with the raisins 🍪.

In regards to this recipe it’s another easy recipe with the cake mix ,such a great idea 💡

lol sometimes I make things my hubby doesn’t really like. That way when I want a cookie they will still be there😳😊. Other times I make the batch and then split it in half. I tell my hubby that is his half and when it’s gone don’t come crying to me for a cookie because I haven’t scarfed all of mine. 😝😝😝 I mean I know. 😉😃

Help! I made these last night using the Thrive grain free cake mix and the batter is too runny to form into a dough. I don't have any cake mix left and am not sure what to do to salvage my ingredients. I would be grateful for suggestions. Thank you :-)

My mix was super thick until I added the milk. We tested with homemade mixes though (both the cassava based and the almond flour based), we did not do test runs with boxed because it usually works interchangeably in all the cake and bread recipes I’ve created. I have noticed Simple Mills mix being way more runny lately than it used to be, which makes me wonder if their formula changed with the sale of their company. I’m going to reach out to them.

Let me order a box of the Thrive mix and grab another simple mills box and test, but I’d suggest leaving out the milk. My Mixes are slightly higher in coconut flour, so there’s more absorbency.

I used unsalted butter and tried twice, but also too runny with Simple Mills. I did not see this post until I was done about not adding the non dairy milk. I am curious if simple mills changed the recipe, bummer because the taste is awesome, but the consistency is way too runny.

Unsalted butter definitely spreads more than palm shortening too. You can add ¼-1/3 cup extra cake mix to the dough if you still have it!

oh that's good to know about the butter. I actually added another box of cake mix (so 2 total) and the cookies are still on the thinner side but better than totally melting. I also used room temperature butter, so probably better to use colder. Look forward to what you find out from Simple mills as this recipe is SO easy and good, hope to continue making it.

They spread out rather thinly, so I finished baking until crispy, broke apart and now I’m thinking of crumbling over Danielle’s banana pudding parfaits! 😅Not going to let them go to waste!
