Simple Single Serving Soup (25g protein!)
and 5g fiber!
Single-serving friendly, ready in about 10 minutes, and packed with 25 grams of protein, it’s creamy, savory, and way more satisfying than reheated leftovers or another deli meat plate. I steamed a head the other night and walked away for just a little too long while juggling the rest of dinner. It was still bright green, but right on the edge of mush.
Instead of forcing it, I repurposed it into this quick blender soup. It’s creamy, savory, and surprisingly satisfying, with about 25 grams of protein and 5–6 grams of fiber per serving. Proof that a simple save can turn into a really good meal!
Most of my recipes are written to feed a family, but I’ll be honest - I ate both servings of this myself for lunch! I’m always looking for easy ways to squeeze in more protein and fiber, and this checks all the boxes. I just leave the second serving right in my blender bottle in the fridge and warm it when I’m ready to eat.
You could absolutely double the recipe and serve four for dinner with a simple salad or some toasted grain-free bread, but for me, it’s been a welcome change from the usual leftover rotation or deli meat lunches. I hope you love it!

Single Serve High-Protein Broccoli Cheese Soup
Serves 2 (single servings. Because if you’re going to make one, you may as well make 2 😉)

INGREDIENTS
1 (12-ounce) package organic broccoli florets,
1½ cups chicken bone broth (plus more as needed)
⅓ cup cottage cheese (I use lactose-free)
¼ cup grated sheep’s milk manchego
1-2 teaspoons Himalayan salt
½ teaspoon garlic powder
½ teaspoon onion powder
freshly cracked black pepper, to taste
½-1 teaspoon freshly squeezed lemon juice, to taste
Trader Joe’s crispy onion garlic chili, for topping
Cottage cheese is having a moment right now (again!), and while I’m not always on board with putting it in everything just to bump protein, it really works here. It melts right into the soup, adds creaminess without heaviness, and makes this feel like a real meal instead of a snack. I use Green Valley Organic’s lactose free cottage cheese because I digest it better, but if dairy isn’t your thing, check the notes below for easy swaps while still keeping the protein high.
I also add unflavored bone broth protein powder (my favorite way to bump dishes significantly!). Adding bone broth protein powder lets you concentrate all the benefits of bone broth into a single scoop, delivering far more protein than you’d ever get from a mug of broth alone without watering down the soup. It’s also a fabulous way to get protein when you can’t tolerate dairy.
I’m super curious so I can keep it in mind for future recipe development. I don’t use a lot of dairy in my recipes here (and absolutely zero in my cookbooks besides ghee), but do you eat it?

METHOD
Reserve one large floret of broccoli and finely chop it, stem included. Set it aside.
Set a steamer basket in a saucepan with about 2 inches of boiling water, add the remaining broccoli, cover, and steam until bright green and tender, about 4–5 minutes.
Add the steamed broccoli, bone broth, cottage cheese, manchego, bone broth protein powder, salt, onion powder, garlic powder, pepper, and a squeeze of lemon juice to a high-speed blender. Blend until completely smooth, adding a splash more broth if needed to keep the soup moving freely.
Pour the blended soup into a saucepan and warm gently over medium-low heat, stirring often. Do not let the soup boil, especially if using cottage cheese, to keep the texture smooth and creamy.
Once heated through, remove from the heat and stir in the finely chopped raw broccoli floret for a little crunch and freshness. Ladle into bowls and finish with Trader Joe’s crispy onion garlic chili on top.
