Roasted Garlic and Wild Mushroom Alfredo Pasta (Dairy-Free and Grain-Free!)

I should get a mom of the year award.
While on back to back zoom calls on Monday, I received the following text from our very kind room mom.
“Hi Danielle! Are you still planning on helping with the library field trip today?”
You know that feeling when your stomach drops below your waist and you feel a little panic nausea coming on?
Let me back up though. Because I dropped my daughter off at school actually feeling very accomplished. Maybe not mom-of-the-year-award-accomplished, but full-time working mom who just got back from a trip and husband out of town accomplished.
I knew she had a field trip. I packed her lunch in a brown paper bag (with a cute octopus sticker closure!) and sent a disposable water bottle, as requested. She had on good walking shoes. She even had my library card in a little envelope all labeled.
She was dropped off with everything she needed for the field trip. Except for apparently - Me.
You know when you just try so hard to be everything for everyone, and you fail? That’s how I felt on Monday. I don’t even remember signing up to chaperone! I hastily jumped off my call with my team, rescheduled three other meetings and drove as quickly as I could. I missed the walk over, but made it for story time and the checking out their own books. Kez’s face was so sweet and surprised. Just as surprised as me. HA!
But on to something I DID accomplish! This week we’re making ALFREDO!!
I did a survey on Instagram recently for recipe requests, and the most voted for savory recipe was a dairy-free Alfredo sauce. I went a little out of the ordinary here and created a Roasted Mushroom Alfredo Pasta, because I already have a more traditional version in my first cookbook Against all Grain with blackened chicken. I really love this brand new sauce though, and am especially excited that it is NUT FREE.
I also have a little preview of an upcoming long-form cooking demonstration video for you! The Brookie test kitchen video seemed to excite you all a lot, so I’m planning on doing more videos here.
