A SUPER Simple Summer Garden Skillet Dinner
In my upcoming cookbook, Make It Easy, the Back Pocket Dinner section features a versatile "recipe" that offers you FOUR different meal options. It uses cooked, sliced sausages paired with a variety of vegetables, seasonings, and sauces to create a framework for a super simple dinner. Perfect for those hectic nights when you need a quick and flavorful meal, but don’t want to cook.
This week’s recipe is similar to that. It’s a fall-back type of dinner that has no frills, but lots of flavor.
Chicken, seasonings, and a variety of summer produce are all cooked in one skillet. The sauce is optional, but I’m obviously loving it right now and putting it on EVERYTHING, because you’ve seen it here on Substack already a few times! It also adds a lot of fiber from all the herbs.
